Here is a simple, healthy breakfast you can make using just 1 non-stick pan. The whole thing takes about 20 minutes to make.
1/4 lb chopped meat (80/20 or better)
1/2 yellow pepper
1/2 cup frozen spinach
3 whole eggs
1/8 cup goat milk
6 oz. butter nut squash (pre-washed, ready-to-cook)
Oil, salt, pepper, butter to taste
1. Cook the meat
Place the meat in the pan and heat. When fully cooked, remove the meat from the pan and drain away excess fat using paper towels. Put this aside for later.
2. Cook the veggies
Place the butter nut squash in the microwave and nuke for 6 to 8 minutes, or whatever the package directions suggest. While the squash is cooking, place the peppers and frozen spinach in the pan and cover with a lid until warm. Remove the cooked veggies from the pan and drain away excess liquid using paper towels. Put this aside for later.
3. Cook the eggs
In a large bowl, whisk 3 eggs together with the goat milk. Place this mixture in the pan, along with the pre-cooked meat and pre-cooked veggies. Heat everything together until the eggs scramble.
4. Plate it up
Place the cooked egg mixture on a plate along with the microwaved squash. Add salt, pepper, butter or any other toppings you like as garnish.
